12. Step 12: Establish a documentation system
The implementation of a documentation system is important to demonstrate both the compliance and the validity of the HACCP plan in place. If necessary, it can be used as evidence. Well-kept and regularly updated records are always a sign of a well-organized and serious organization. There are four main types of record to be kept as part of an HACCP system (figure 5 ):
